When my phone (Huawei P30 Pro) goes into lock screen, MPE disconnects from WiFi. This means I have to constantly try to stop the phone going into lock while I'm using MPE.

Huawei has strict settings for power saving by default. It is possible that it disables WiFi in sleep mode so MPE won't be able to continue connection. My P20 Lite has 3 power saving modes - no power saving, saving battery with custom exceptions and last one: save battery no matter what.
You can check if Your phone has still connection pinging IP of your huawei from for example wifi router. Or from other machine connected to the same wifi if there is no separation beetween devices on net.
